Degenerative joint disease occurs over time with varying pain intensity depending on the individual. One of the primary mediators of pain in the degenerative process is the inflammatory cascade. An anti-inflammatory diet can reduce pain by decreasing the amount of circulating proinflammatory mediators. This chapter will define inflammation, delineate the major mediators of the inflammatory cascade, and differentiate the pathogenesis between acute and chronic inflammatory conditions. Research exploring components of a proinflammatory and anti-inflammatory diet, including macronutrients, vitamins, minerals, beverages, herbs, and spices, will be discussed.
