Poor diets have well-established associations with some of the world’s leading causes of morbidity and/or death such as obesity, diabetes, cardiovascular disease, and cerebrovascular disease. Beyond prevention, high-quality healthy food choices alone or in combination with traditional western medicine can lead to improved treatment outcomes. This includes the prevention and treatment of musculoskeletal conditions as explored throughout this textbook. This chapter will elaborate on the definition of culinary medicine, explore its growth throughout recent history, and demonstrate that exciting discoveries continue to be made in the field of culinary medicine as it relates to sports nutrition.
