Food waste remains a major global problem with huge environmental, economic, and social impacts, which call for critical innovative solutions. This chapter, titled Innovative Technologies: Transforming the Battle against Food Waste, explores the latest advancements and strategies designed to mitigate food waste across the supply chain. The key focus areas are the creation and use of digital technologies such as artificial intelligence and blockchain for the traceability of food, inventory management optimization, and supply chain transparency. It also discusses the role played by eco-innovation policies in the reduction of food waste and illustrates case studies in this regard. It also elaborates on sustainable practices in food waste management and ways of valorizing bioactive compounds, representing new opportunities for both the food and pharmaceutical industries. Putting them into action means reducing food waste, greenhouse gases, water conservation, land resources, and a more sustainable food system. This review aims to help synthesize the latest research findings and practical applications to provide an intellectual look at how innovative technologies are giving new momentum to the fight against food waste by paving the way towards higher efficiency and sustainability.
