We start our journey with cereals because these crops produce more food energy (51% of calories and 47% of protein in the average annual diet) than any other crop group (World Bank WDI database 2000 to 2020, based on FAO data). Maize, wheat and rice are the world’s most widely grown cereals. Maize leads with almost 1100 million tonnes harvested in 2018/2019, followed by wheat (734 million tonnes) and rice (495 million tonnes, FAOSTAT, 2020). Together, these three cereals account for nearly 90% of world cereal production. Maize is grown mostly, and rice almost exclusively, in warm temperate to tropical regions.
