Edible insects represent an innovative and a sustainable solution to global food security and nutritional challenges. This chapter focuses on the role of biotechnology in enhancing the production, processing, and acceptance of edible insects as a mainstream food source. Recognized for their exceptional nutritional profile, including high-quality proteins, essential fatty acids, vitamins, and minerals, they offer a viable alternative to traditional livestock. Incorporating biotechnology into edible insect farming and processing has enhanced efficiency, safety, and nutritional value. Advances such as genetic optimization, enhanced feed formulations, and innovative processing techniques mitigate allergenic risks and improve consumer acceptance. Despite their potential, the widespread adoption of edible insects faces cultural resistance, particularly in regions where entomophagy is unfamiliar. Food neophobia and safety concerns pose challenges, necessitating public education, marketing strategies, and policy development. Regulatory frameworks are emerging globally, with regions such as the European Union and Asia–Pacific leading efforts to ensure safety and quality standards for insect-based foods. Biotechnological innovations also unlock the potential of edible insects as functional foods, providing bioactive compounds that promote health. Their lower environmental impact compared to livestock, including reduced greenhouse gas emissions and resource use, underscores their importance in addressing sustainability goals. Moreover, integrating indigenous knowledge into modern culinary practices and expanding the diversity of insect-based products can enhance their appeal and cultural relevance. As the global population grows, edible insects could play a pivotal role in creating a resilient and sustainable food system.
