This trend continues as global açaí consumption expands, with market analysts estimating the global açaí market at $1.23 billion in 2024, rising to $3.09 billion by 2032. However, the rapid expansion of the açaí market has introduced considerable challenges in waste management, specifically regarding the disposal of seeds and fibers generated during fruit pulping. Ensuring the sustainability of açaí production requires viewing this waste as a valuable resource for high-value product manufacturing. Research has indicated that residues from the açaí production chain possess significant bioactive properties, including antioxidant, anti-inflammatory, and biotechnological applications, making them valuable resources for a variety of industries. These by-products also represent a promising foundation for developing therapeutic applications capable of fostering technological innovation and job creation. To advance sustainable development discussions within the açaí production chain, this chapter explores strategies for valorizing açaí waste, with a focus on its bioactive properties and potential applications. The insights provided here aim to contribute to the development of novel therapeutic products with potential benefits for public health, ultimately supporting the sustainable expansion of the açaí industry.
