Traditional Production System of Iberian Pig and Its Potential for Adaptation to Organic Livestock Farming

This chapter reviews the traditional production of Iberian pigs and the organization for fattening the pigs by grazing on acorns in the dehesa during autumn-winter. Thus, this system is proposed as a model for producing organic pigs using natural resources and with the lowest carbon footprint, along with other environmental benefits that livestock production in agroforestry systems offers. Details of the organization of the farms and the requirements for conversion to organic production are also provided.
