This chapter examines the institutionalization of the natural wine field in Italy, exploring how associations, fairs, and distributors contribute to its development. The study highlights key events from 2002 to 2004 that were pivotal in structuring the field, such as the inception of significant fairs like Vini di Vignaioli and the establishment of associations like ViniVeri and VinNatur. The role of influential actors, including distributors and the interaction with bureaucratic and scientific fields, is analyzed to understand the dynamics of legitimacy within the movement. The complex interplay between market forces and ethical values underscores the ongoing struggle for authenticity and recognition in the broader wine industry.
