Enhancing Digital Capabilities of Cold Chain in Small Food Factories Using AIoT and IOTA Techniques

Cold chain management is crucial for ensuring the safety and quality of perishable goods, especially in small food factories where resources for advanced monitoring and risk control are constrained. This study proposes an AIoT and IOTA-enabled cold chain service platform, termed AICC. AICC is an integrated framework leveraging Artificial Intelligence of Things (AIoT), Long Short-Term Memory (LSTM) networks, and the IOTA decentralized ledger to enhance the digital capabilities of cold chain systems in small food factories. The framework employs AIoT devices for real-time monitoring of critical environmental factors, including temperature and humidity, while the LSTM model predicts sensor maintenance and replacement schedules, ensuring system reliability. IOTA technology secures data storage and traceability, promoting data integrity and transparency throughout the cold chain. This solution addresses challenges like inefficient monitoring, limited visibility, and operational risk management. Experimental results confirm the framework's efficacy in stabilizing cold chain operations, improving monitoring efficiency, and optimizing sensor maintenance timelines. AICC offers small food manufacturers an affordable, scalable solution to enhance cold chain management and food safety.
