Food Product Development
摘要
In order to cope with global challenges of sustainability in food industry, and to meet the objectives of sustainable development goals of the United Nations (US), this chapter has addressed the concept of an integrated food and bioprocessing industry (IFBI). Moreover, it has described the steps of food product development for an IFBI. This chapter has further discussed the factors on which success and failure of a bioproduct produced by an IFBI. Moreover, the chapter has described how preference mapping of consumers affects the process of food product development. Furthermore, this chapter has clearly defined the involvement of consumer in the product development as well as role of consumer in product testing. In addition, the importance of statistical tools has been discussed for optimization of product quality for utmost sustainability, profitability, and consumer satisfaction. Likewise, chemical and instrumental analysis have been described, which can be used for food authenticity, safety, and quality. Finally, ethical considerations in food production and consumption aligned with sustainable development goals have been briefly discussed. In conclusion, food product development in an IFBI is a complex process, and requires through planning and a lot of resources. Moreover, understanding of consumer preferences and incorporating ethical practices are also essential for the success of IFBI.
