The intricacies of enzymatic conversion, a crucial process that leverages the catalytic qualities of enzymes to transform substrates into valuable products for a variety of industries, are examined in this chapter. Enzymes are necessary for biological reactions such as hydrolysis, oxidation-reduction reactions, and transfer reactions because they operate as biocatalysts. The chapter dives further into the kinetics, sources, and production processes of enzymes after providing a quick overview of the fundamental types of enzymatic reactions and their mechanics. It highlights the significance of microbial, plant, and animal enzymes in industrial contexts, particularly in the biofuel, food, pharmaceutical, and environmental sectors. Additionally this chapter also highlights the development of enzymatic technology, including genetic engineering, enzyme immobilization, and the use of artificial intelligence in enzyme optimization.
