Properties, Extraction, Characterization, and Market Opportunities of Edible Oil from a Residual Microalgae Biomass

Oils extracted from microalgae have been studied for use in generating clean energy. However, they have been studied for human consumption in the food industry due to their nutritional properties. This chapter shows the importance of the physicochemical properties of oils, the most used extraction methods, the importance of cultivation systems for oil use, and the market potential of these resources.
