Celiac disease is an autoimmune condition in which exposure to gluten damages the small intestine and can present with several varying symptoms. It is a common pediatric disease and implementing its treatment, a strict gluten-free diet, can present challenges, especially in schools. In this chapter, we will discuss the background of the disease, provide examples of gluten-containing foods, and highlight approaches to providing a safe and gluten-free learning environment for children.
