This chapter presents winemaking protocols that we have created and used with very good results. By winemaking protocols, we mean predetermined steps that someone must follow in order to have a quality wine that will be repeated in the following years applying the same protocol [1]. It is quite reasonable and desirable that some may not fully agree with any of the protocols presented. More specifically, to some it may seem excessive to apply such a protocol and to others it may seem that we are not using all the oenological additives we can in order to have the best possible result. Either way, it is taken for granted that by applying any of the protocols presented you will create an exceptionally high-quality wine.
