The growing need to reduce environmental impacts of fashion and textile manufacturing has led to greater demand for renewable, non-damaging process inputs that are either biodegradable or recyclable. Bacterial cellulose (BC) is a promising candidate prepared from food ingredients or even food wastes using low-cost methods, which has high potential for a range of applications in fashion and textiles. This chapter discusses some of the candidate ingredients available in Vietnam, a rapidly developing country with a well-established fashion and textile industry. The chapter will cover BC growing processes and characterization techniques, drawing on the results of experiments carried out at RMIT Vietnam. A range of BC samples has been successfully grown using locally available ingredients, including black tea, oolong tea, and green tea combined with some locally available fruits such as dragon fruit, banana, and watermelon. The samples were used to develop BC-based textiles, and the properties of these textiles were investigated to find potential applications. Various characterisation techniques to investigate the properties of Kombucha are also discussed in this chapter. It was found that BC has the potential to replace fossil fuel-based textiles, as the properties emulate those of existing plastics. The resulting textiles have the potential to be used in several applications, including apparel, fashion accessories and food packaging, addressing the damaging production and waste issues created by current textile technologies, and making a contribution to the circular economy through waste reduction.
