Protein Enriched Pasta

Proteins are the essential macronutrients in the human diet, a major source of nitrogen and are fundamental to the body functions and structure. People in the developing countries utilize cereals, which lacks high-quality proteins as their staple food, therefore resulting in severe protein deficiency disorders. Conventional foods like pasta can act as the effective carriers for nutrient enrichment and, therefore, are aimed by the growing and demanding market for enriched food products. Different protein sources exhibiting not only higher amount of protein but also the excellent protein quality can be considered as the best ingredients for protein enrichment of pasta products. The protein sources include plant proteins (cereals, millets, pseudocereals, seeds and plant-derived hydrolysates and concentrates); animal-derived proteins (poultry, fish, milk derivatives, insects, animal protein isolates and hydrolysates); algal proteins and peptides; fish and insect proteins. The quality of protein depends on its essential amino acids profile and its digestibility, therefore, substitution by the proteins composed of the essential amino acids that complements the conventional cereal proteins can pave a new way towards the hidden hunger and nutritional security.
