The technologies in pasta manufacturing have evolved over time from manual driven machineries to automation and other advances. The primary aim of machineries advancement is to optimise the process, ensure finest quality of final produce and maintain consistency to gain consumer trust. Pasta making majorly includes machineries for extrusion process, drying process, cutting and shaping process. In recent years, efforts have been made to improve the efficiency of the process and thereby use of sensors and automation have come into play. Integration of modern day IoT, nanotechnology and computer vision in pasta manufacturing has also been discussed in the unit (Bresciani A, Pagani MA, Marti A, Foods 11(3):256, 2022; Ahmed A, Wafi N, BinHasan M, Kahal M, Elmergib J Electr Electron Eng 2(3):13–22.
