As a tropical country with great biodiversity, Colombia has a high potential for fruit production. Some opportunities for bioeconomy actions in this sector have been identified with orange peels that are not currently treated in the food industry. A food company in the region of Santander (northeast Colombia) produces 10 tons/day of orange peels that are not adequately utilized and is seeking a project to design a pilot plant to treat this wasted biomass and produce pectin for the industrial and food sectors. Pectin is currently imported in Colombia and is widely used as a food stabilizer. The project includes waste characterization, production tests, scaling up of operating variables, equipment selection, and pilot plant design, as well as an economic-environmental-social study. This project is considered a “green initiative” framed in circular economy criteria because it increases the added value of local agroindustry, generating employment and increasing the sector’s productive chain. The industrial phase of the citrus production chain includes products such as juices, concentrates, nectars, purees, pastes, pulps, jellies, and jams. By-products in the juice industry, consisting of peels (albedo and flavedo), seeds, membranes, and juice vesicles, represent approximately 50% of the weight of the original whole fruit, so the development of alternative products with higher added value would benefit citrus fruit processors. Essential oils (EOs) and pectins are some of the products that can be obtained from citrus waste.
