It is essential to measure moisture level in agricultural products. A square electrodes and circular electrodes structure based parallel plate capacitive sensor is proposed to measure the moisture content in the varieties of grain. To assess the moisture level in chickpea grain, these structure based capacitive sensor was drawn and simulated on Ansys Electronic Software. The alteration in sensor’s capacitance value at frequency 100 kHz is showing a direct relation with the different moisture values of the chickpea grain from 10 to 30%. Additionally, the calibration equation from experimental findings was developed. The results of square and circular structure based parallel plate capacitive sensor were further compared which shows that circular structure is more sensitive and has better capacitive response.
