Omega-3 fatty acids are essential nutrients with numerous health benefits, including cardiovascular health, brain development, and reducing inflammation. While traditional sources of omega-3 fatty acids include fish oil and supplements, natural fortification of food products offers a promising approach to increase the intake of these vital nutrients in the general population. This research paper explores the various strategies for the natural fortification of food products with omega-3 fatty acids, including the incorporation of plant-based sources, microalgae, and genetically modified organisms (GMOs). The chapter discusses the potential benefits and challenges associated with each method, as well as their impact on sensory properties and consumer acceptance. Moreover, the review addresses regulatory considerations and safety aspects of incorporating omega-3 fatty acids into food products.
