Especially for valuable goods it is important to keep track of who is handling them and when along the supply chain, which requires trustworthy logging measures. Moreover, valuable goods may be manipulated along the supply chain. One countermeasure is to constantly measure key properties of the goods like the quality and log it in a non-modifiable database. For properties that are supposed to stay the same or those that are supposed to decrease over time like the freshness of food any contradicting value may witness manipulations of the underlying goods. This paper presents the design and analysis of such a tracking application which may be used in practice to both log who is handling goods when and to spot potential manipulations. To this end, several distributed ledger frameworks are compared. Based on Hyperledger Fabric, an application for measuring the freshness of fish along its supply chain is developed as a demonstrator. Moreover, it is evaluated with respect to its practical applicability.
