Synthesis and Characterization of Glucose Syrup Through Acid Hydrolysis

In Ethiopia, numerous plant species can serve as a starch source for producing glucose syrup for industrial and medicinal use even if it relies on imported glucose syrup. There is a potential to utilize cost-effective, sustainable, and easily accessible local resources without compromising product quality or quantity. This study aims to produce glucose syrups using potatoes sourced locally and with high potential. After the tubers of Plectranthus edulis were washed, peeled, sliced, and ground for 3 min, the starch was extracted and purified using the sedimentation method. The isolated starch was assessed for its swelling power, solubility, water-binding capacity, ash, and moisture content. Glucose syrup was prepared in an autoclave by subjecting starch to acid hydrolysis at a controlled temperature and pressure. The experiment involved varying hydrochloric acid concentrations (0.2, 0.6, and 1 molar), hydrolyzing times (60, 90, and 120 min), and starch suspensions (5, 10, and 15%). The resulting physicochemical and rheological properties of the glucose syrup derived from potato starch were analyzed. The study found that acid concentration, hydrolysis time, and starch suspension significantly affect the taste, flow properties, and dextrose equivalent value of glucose syrup from Plectranthus edulis. To sum up, the study results demonstrated that Plectranthus edulis starch can be used to produce glucose syrup through acid hydrolysis.
