The phytochemical composition, including phenolic compounds, prebiotics, carotenoids, and nonpolar compounds of jaboticaba fruit, has been highlighted in this chapter together with incites on how to extract and analyze such compounds. The main phenolic compounds in jaboticaba berry are anthocyanins, such as cyanidin-3-O-glucoside concentrated in the peel, and tannins, found in abundance in the peel and seed of the berry. Fruit phenolic compounds contribute to most of the fruit’s total antioxidant capacity. Furthermore, pectin, other dietary fibers, and non-digested phenolics from jaboticaba have shown potential for prebiotic activity. The composition of jaboticaba’s non-phenolic bioactive compounds, such as carotenoids and phytosterols, requires further investigation, as they contribute to its bioactivity.
