Jaboticaba, a popular Brazilian berry, has a remarkable polyphenol composition and is promising in terms of health benefits and application in derived food products. To enhance its value and consumption, researchers are exploring technological processes for developing jaboticaba-containing products. Encapsulation emerges as a promising technology to expand its applications. Various encapsulation techniques can be employed to protect jaboticaba’s bioactive compounds. These techniques produce final products with diverse structures and morphologies, ranging from dispersed polymeric microparticles to micro/nanocapsules or nanoemulsions, depending on the chosen method and processing conditions. Jaboticaba extracts, rich in anthocyanins and ellagitannins, have been associated with a variety of health benefits, including anti-inflammatory, antidiabetic, hepatoprotective, and hypolipidemic properties. Several encapsulation techniques, such as microfluidics, ionotropic gelation, coacervation, and electrohydrodynamic processes, hold promising potential for encapsulating and preserving the bioactive compounds of jaboticaba. However, research on encapsulated compounds and the impact of processing on both technological and therapeutic aspects remains in its early stages. Nevertheless, this chapter aims to highlight promising encapsulation techniques and potential therapeutic applications for jaboticaba-based products.
