Its deficiency can lead to osteoporosis and rickets, while excess calcium can cause kidney stones and interfere with the absorption of other minerals. Iron is vital for oxygen transport in the blood and energy metabolism, and iron deficiency is one of the most common nutritional deficiencies globally, leading to iron deficiency anemia. This chapter also highlights the role of bioactive compounds found in foods, such as carotenoids, polyphenols, and flavonoids. Although not considered essential nutrients, these compounds have antioxidant, anti-inflammatory, and chemopreventive properties, contributing to the protection against chronic diseases such as cancer, cardiovascular diseases, and neurodegenerative disorders.
