Edible Mushroom and Cardiovascular Health
摘要
The present chapter delves into the correlation between the consumption of edible mushrooms and cardiovascular well-being. There has been a growing interest in edible mushrooms in recent years due to their potential advantages and impact on cardiovascular health. The present chapter offers a comprehensive examination of the nutritional makeup of edible mushrooms, with a particular emphasis on significant bioactive constituents, including polysaccharides, β-glucans, antioxidants, and sterols. The text explores the mechanisms by which these compounds may exert cardioprotective effects, such as their capacity to regulate lipid metabolism, decrease inflammation, control blood pressure, and enhance endothelial function. In addition, the chapter provides an overview of epidemiological studies and clinical trials that have examined the correlation between the consumption of mushrooms and cardiovascular outcomes. The present study also investigates the potential impact of edible mushrooms on preventing and managing cardiovascular diseases, including coronary artery disease, hypertension, and stroke. Furthermore, this chapter examines the factors to be considered when integrating mushrooms into dietary regimens to enhance cardiovascular well-being. Additionally, potential directions for future investigation in this domain are explored.
