Novelty products are usually hand-held, single-serving products. They are often purchased on impulse based on their design, presentation, and point of purchase. The word “novelty” conveys the qualities of freshness, uniqueness, and cleverness in creation and marketing. Novelties have included quiescently frozen stick bars, molded and extruded stick or stickless bars, sandwiches, cones, cup items, and more. They can be made of many types of frozen desserts, including ice cream with its various fat contents, frozen yogurt, sherbet, sorbet, puddings, fruit ices, and non-dairy plant-based formulations. Items such as chocolate, wafers, cookies, nuts, and caramel sauces are frequently incorporated into novelty items. In this chapter, the manufacture of and equipment for cup, cone and sandwich products, molded products, extruded products, ice cream cakes, and multi-portion products are all discussed, including a review of state-of-the-art equipment offered by the major equipment manufacturers.
