Glycerol has many applications in cosmetic, paint, automotive, food, and pharmaceutical industries, as well as in the production of explosives. Currently, crude glycerol is commercially available as a by-product of biodiesel production; however, its costs of purification are prohibitive. This chapter contains description of industrial production of glycerol through glucose fermentation by Candida sp. and Saccharomyces cerevisiae. Besides, it covers glycerol metabolism, its role in yeast cells, and the bioconversion of glycerol by-products to various useful compounds.
