How Sustainable is Campus Dining?

In this study, the environmental impacts of a university dining hall in Istanbul were investigated by life cycle assessment. After the functional unit and system boundaries were determined, data were collected for one year from the dining hall. The functional unit is 1000 services in the cafeteria. In this study, GaBi 7.3 software was used for life cycle analysis. The database used is Ecoinvent 3.1. The CML 2001 method was chosen to evaluate the environmental impacts and the results were interpreted. Impact categories evaluated are: Abiotic Element Depletion Potential Elements and Fossil (ADP Elements, ADP Fossil), Acidification (AP), Eutrophication (EP), Freshwater Aquatic Ecotoxicity (FAETP), Global Warming (GWP), Human Toxicity (HTP), Marine Aquatic Ecotoxicity (MAETP), Ozone Layer Depletion (ODP), Photochemical Ozone Creation (POCP), Terrestrial Ecotoxicity Potentials (TETP). In this study, within the scope of waste scenarios, sending organic wastes to the compost facility, sending organic wastes to an anaerobic digester, cardboard & paper recycling, aluminum recycling and sending the remaining wastes to sanitary landfill are included. Cardboard recycling and aluminum recycling brought negative results in all impact categories for all scenarios indicating environmental benefits. ADP Elements and FAETP for all scenarios gave negative results. Cardboard recycling and aluminum recycling have negative values for all impact categories. Since the results of the aluminum recycling scenario are very high compared to the results of the paper recycling scenario, the negative values in the total scenario results are due to aluminum recycling. Waste recycling contributed to the reduction of environmental impacts.
