Consumer awareness on health and risks associated with synthetic ingredients has led to a demand in products with bioactive compounds such as bioingredients. For that reason, the aim of this overview is to examine one of the most relevant developments in biotechnology: food and food benefits. The current COVID-19 pandemic and the increase preoccupation about the role of food on life quality has been the main driver for this chapter. Three main blocks are distinguishable: (a) bioingredients and biotechnology as tool to improve it; (b) fermentation and compounds of interest; and (c) production and processing of bioactive peptides as food specialties and its health benefits.
