Contributions of Food Engineering for the Transition Towards a Circular Economy. Opportunities, Challenges, and Limitations

Circular economy (CE) encourages regeneration and reuse in production processes, deriving materials back into industrial cycles and biological components to restore nature cycles. These tasks favor the compliance of Sustainable Development Goals (SDGs), established by the United Nations, which have identified food security and sustainable production practices as the main challenges that face humanity. Under CE premises, consumption and markets should be designed to optimize the use of the products and by-products generated, which does not consist only of recycling and managing waste. Some strategies have been proposed for those purposes, such as rebalancing the relationship between food systems and the natural environment; implementation of accessible methods and equipment adapted to local raw materials; care of biodiversity and sustainable use of native plants revaluing crops and productive practices of native people to preserve ancestral varieties and generate differentiated products with added value for the development of family farming. The creation of efficient systems through CE, and innovation through the development of new products and services can potentially restore progress to stagnant market segments. This chapter will address the tools that can be provided by engineering and food technology that contribute to favoring these objectives, considering also the limitations of ideal circularity.
