Microalgae pigments are highly valued natural ingredients, driven by consumer preference for healthy, natural, and clean-label foods, offering superior physiological effects like antioxidant and antibacterial capabilities. The global microalgae pigment market is significant, projected to reach USD 970 million by 2025, with key products including astaxanthin, β-carotene, phycocyanin, and chlorophylls. However, marketing these products necessitates strict safety checks and adherence to diverse regulatory protocols across different regions. This chapter details legislative frameworks in Europe (Food Safety, Novel Food, Nutrition, and Health Claims regulations), the USA (Federal Food, Drug, and Cosmetic Act, Dietary Supplement Health and Education Act, GRAS status), and Asia (Food Safety Laws in China and Japan, Nagoya Protocol). Concerns regarding toxicity, allergens, and contaminants necessitate rigorous safety evaluations. Despite complex approval processes, the increasing demand for natural products and technological advancements indicate continued growth for the microalgal pigment industry.
