Laboratory extraction methods are of great importance for obtaining native starch in sufficient quantity and quality for characterization, especially from raw materials with little or no information in the literature. The aqueous extraction technique should be used initially, as it aims to obtain native starches with minimal modification, facilitating the separation of non-starch carbohydrates, fibers, sugars, proteins, lipids, ash, and other bioactive compounds such as pigments and antinutrients. This chapter discusses the aqueous extraction method, as well as essential precautions, standardization procedures, and strategies to optimize the yield and purity of the extracted starch.
