In starches, fibers may be present in minimal amounts, below 0.5%, as during the extraction process, those that are insoluble are the ones that are most easily extracted, whereas the soluble ones are difficult to remove. Enzymatic–gravimetric methods are the most recommended for the analysis of dietary fibers in foods, including starches.
