Glycemic Index and Load of Carbohydrates In Vivo Method

Scientific evidence has demonstrated a positive correlation between postprandial glycemia and health status. Glycemic index (GI) is a tool used to determine the incremental blood glucose responses in volunteers after consuming carbohydrate-containing food. It is a valid, standardized and reproducible method for classifying carbohydrate-containing foods and guides healthier food choices to prevent or treat cardiometabolic outcomes. This chapter aims to describe the step-by-step procedure of the “in vivo” assay to classify carbohydrate foods’ glycemic index.
