Extraction Strategy for Enhancing Solubility of Mushroom Polysaccharide Extracts: From Insoluble Fractions to Bioactive Compounds

Mushroom polysaccharide solubility is influenced by several factors. Their branched architecture and large molecular weights often promote aggregation, limiting dissolution. While conventional methods focus on separating soluble from insoluble fractions, a significant part of bioactive compounds remains locked within cell walls. Harsher acid or alkaline treatments can free these compounds by loosening the rigid wall matrix. In addition, enzymatic or ethanol-based pretreatments can enhance extraction efficiency and purity. This chapter offers practical guidance on pretreatment, extraction, and purification of insoluble mushroom polysaccharides, with emphasis on reproducible protocols and improved solubility.
