Phytosterols are plant-derived sterols known for their cholesterol-lowering and therapeutic effects. This chapter focuses on the downstream processes for isolating, purifying, and analyzing phytosterols from crude extracts. Extraction protocols are described in Chapter 4 . The methods covered include recrystallization, urea complexation, molecular distillation, membrane filtration, and preparative HPLC for purification, along with TLC, GC-MS, HPLC, NMR, and FTIR for structural characterization. These methods facilitate the production of high-purity phytosterols for food, pharmaceutical, and analytical applications.
