CRISPR-Cas Systems for Foodborne Pathogen Detection

Foodborne pathogens are microorganisms such as bacteria, fungi, and viruses that cause significant disease outbreaks worldwide. Even though there are many recent advancement in techniques in food preservation and food safety, these pathogens still cause substantial impacts on public health due to contaminated food. This chapter shows different methods like culture-based, Polymerase Chain Reaction (PCR), immunoassays, and next-generation sequencing (NGS)-based methods but mainly focuses on the recently developed gene-editing technique. CRISPR Cas9 system is an advanced and currently emerging scientific technique that helps alter an organism’s DNA as it is more accurate and speed than other techniques. This review shows how CRISPR-Cas9 technology helps to detect foodborne pathogens.
