Absorption of Iron by Intestinal Cells
摘要
This chapter presents the protocols to access the absorption pathways of iron nanoparticles coated with citrus pectin. The toxicity of the encapsulates can be assessed using an in vivo model of Artemia salina. The absorption of iron can be quantified by determining ferritin values on intestinal Caco-2/TC7 cells, and its internalization mechanisms, by employing inhibitors of endocytic pathways and quantifying ferritin.
