Fruit by-products contain a variety of bioactive compounds, with a focus on phenolic compounds, which are secondary metabolites and biologically active phytochemicals found in varying concentrations and have the potential to provide several health benefits. In recent years, several studies have focused on quantifying phenolic compounds and their antioxidant potential and evaluating the bioaccessibility of these compounds after in vitro digestion using different methods. In this chapter, the preparation of the sample, in vitro gastrointestinal digestion, extraction methods, and identification of phenolic compounds in fruit by-products are described, along with the formula for determining the bioaccessibility of the identified compounds.
