With time, the growing awareness regarding food waste products and environmental sustainability resulted in the development of innovative green extraction techniques to obtain high-value nutraceuticals from food waste. These eco-friendly techniques employ sustainable methods for extraction, bioprocessing methods, and advanced technologies to extract high-value nutraceuticals from food wastes such as peels of fruits and vegetables, leftovers of vegetables, bran, and other agricultural by-products. Green and clean extraction technologies like supercritical fluid extraction, ultrasound-assisted extraction, and enzymatic extraction give advanced methods to recover nutraceuticals from food waste, which results in a reduction of environmental impacts. This chapter deals with the economic and ecological viability as well as regulatory considerations to produce high-value nutraceuticals from waste material. It resulted in the standing of a circular economy in reducing food waste, lowering the emission of greenhouse gases, and promoting resource-efficient industrial follows. The case studies highlighted the successful application and investigated how companies have changed waste into useful products that have great health impacts. Despite the considerable potential, it is crucial to tackle challenges related to scalability, standardization, regulatory adherence, and consumer acceptance.
