Due to the customer awareness and rising concerns regarding the increased application of plastics which lead to the increased carbon emission and finally global warming, researches have been looking for an alternative to plastics in the food industry as well as other sectors. Edible films/coatings have risen as a reasonable solution to said problem. These packaging are edible, non-toxic, biodegradable, and environmentally friendly. Main materials for the formation of edible packaging include biopolymers, such as polysaccharides, proteins, and lipids. These biopolymers come from various sources including plant, animal, and marine origins. However, considering the amount of food waste produced worldwide, this particular source has gained popularity as a sustainable source to obtain polymers needed for film/coating production. Other than biopolymers, which are the main components of film formation, additives such as antioxidants, antimicrobial agents, plasticizers, and solvents are also important components in this process since each compound can influence different properties of films/coatings including, its gas and water vapor barrier properties, mechanical attributes (tensile strength and elongation percentage), and its appearance (color, transparency, and odor). Basic methods of film formation are categorized into two groups: wet and dry methods. Moreover, coating deposition on different products can be done through various techniques including dipping, spreading, spraying, panning, and fluidized-bed processing. This chapter aims to introduce the essential materials in the production of films/coatings and their individual influence on the final product. Moreover, common methods of film formation and their specific pros and cons are explained.
