This chapter explores the integration of essential oils (EOs) into food systems, focusing on their diverse applications, challenges, and innovative solutions for enhancing food quality, safety, and sustainability. Essential oils, rich in bioactive compounds such as terpenes, phenols, and aldehydes, are recognized for their antimicrobial, antioxidant, and flavor-enhancing properties. These oils have served as natural alternatives, combating foodborne pathogens and delaying oxidation particularly in high-fat food products, while contributing to sustainability.
