Analysis of Lycopene Isomers

Carotenoid analysis is usually done using reversed-phase HPLC. When interested in the HPLC separation of carotenoid isomers, a C30 column is state-of-the-art. This chapter describes the HPLC separation of lycopene isomers, including the preparation of stock solution and working solutions as well as the iodine isomerisation, forming (Z)-isomers of lycopene. Step-by-step descriptions are presented for lycopene extraction out of food samples or human plasma samples and HPLC analysis, together with examples of chromatograms and UV/Vis spectra.
