Many Salmonella LAMP assays have been developed and applied toward the rapid, reliable, and robust detection of Salmonella in foods. The Salmonella LAMP assay detailed in this protocol specifically targets the invasion gene (invA) and has been validated in 34 human food and animal food matrices to date. Using frozen fish and dry dog food as representative matrices, samples are enriched and processed for nucleic acid extraction before the LAMP analysis. The LAMP assay can be performed on a small fluorometer or a standard qPCR instrument. Data interpretation includes evaluation of controls, positive/negative sample calls, and suggested repeats for inconclusive results. This Salmonella LAMP protocol is an invaluable tool for analyzing foods for Salmonella contamination.
