However, in the past decade, there has been a notable increase in the application of these phospholipid vesicles in nutraceuticals and food applications. The delivery of vitamins, especially those that are poorly water-soluble and lipophilic, is challenging. The encapsulation of these vitamins in the liposomal matrix provides an opportunity to introduce those deficient vitamins into the food. This chapter provides the foundation for different types of liposomal matrixes, formulation techniques, and recent applications in the encapsulation of vitamins.
