The milling process plays a crucial role in producing value-added ingredients from pulses such as lentils and will tremendously alter the future of pulses and cereal industries. This chapter presents a detailed guide on reducing the particle-size of red lentils through two distinct milling methods: roller milling and hammer milling. Additionally, an analysis of the particle-size distribution (PSD) of the milled fractions reveals a bimodal distribution for roller-milled red lentils and a unimodal distribution for hammer-milled red lentils.
