Atomization drying in a spray dryer is a simple, low-cost, and large-scale application method. The microencapsulation process using whey protein concentrate allows for improved performance in microparticle yield, encapsulation efficiency, and compound retention. Here, we describe the procedures to microencapsulate phenolic compounds (PCs) from coffee husks.
