Concentrated, Isolated, and Hydrolysate Whey Protein Obtained by Membrane Separation Processes

For many years, whey represented a challenge for the dairy industry due to its high concentration of organic material, which, if not treated and disposed of correctly, can cause major environmental damage. However, with the advances in membrane processes, it was possible to add value to this waste, obtaining compounds of high nutritional value and great commercial interest, popularly known as whey protein (WP). This chapter describes the protocol of whey protein production, outlining important factors related to sample handling, membrane selection, and the operation process for obtaining different kinds of whey protein using membrane technology.
