Food business operators, food microbiologists, and risk assessors need efficient solutions to share their data, models, and tools. This is specifically true in the domains of predictive microbiology and food safety risk assessment. Currently, predictive and risk assessment models are mainly generated with software tools that do not “speak the same language,” that is, models are provided in various formats and rely on different execution environments. The lack of harmonization in how models can be exchanged has made the (re)use of models difficult. Members of the Risk Assessment Modelling and Knowledge Integration Platform (RAKIP) Initiative developed the “Food Safety Knowledge eXchange” (FSKX) format that addresses this issue. The FSKX file format allows to share relevant data, metadata, and model scripts in a machine-readable format. To support the adoption of the FSKX format, the open source software Food Safety Knowledge Lab (FSK-Lab) has been developed. FSK-Lab provides all required functionalities to create, modify, read, write, join, and execute FSKX-formatted models. This chapter illustrates how the FSKX model creation and execution tasks can be accomplished with FSK-Lab.
